Green veggies and buckwheat bowl

ingredients:

  • 1 cup cooked buckwheat 
  • 2 cups broccoli 
  • 2 cups fresh spinach
  • 2 cups sweet potato 
  • 1 glove of garlic
  • 1/2 cup white miso + 1/2 cup warm water + 1/2 cup white wine

dip:

  • 1/4 cup almond butter + 1/2 cup soya yoghurt + 2 tbsp tahini
  • toppings:
  • cilantro, spring onion (chopped)
  • 2 tbsp flaxseed oil
  • black toasted sesame
  • chili flakes 

method:

  1. cook buckwheat as instructed on the pack
  2. heat dry pan and grill sweet potatoes for about 5 min
  3. add broccoli, grill for another 5 min
  4. add garlic and deglaze with water / miso mixture
  5. cover and let it simmer for about 20 min
  6. short before done, add spinach and blanche 
  7. top with yoghurt and other toppings
