Soba noodle bowl with orangey tempeh

Undoubtedly this one is going to be one out of my top 3 comfort food dishes from now on: It’s a combination of sweet, sour, fruity and spicy flavors that matches so well together without overlaying or deleting each other, same for texture: even without frying in oil you will receive crunchy tempeh, different textured veggies but still the creaminess of the sauce.

main ingredients:

  • 200g tempeh, sliced
  • 3 large spring onions, thinly sliced
  • 3 medium carrots, thinly sliced
  • 1/2 medium cucumber, thinly sliced
  • 250g baby spinach
  • 150g edamame
  • 300g soba noodles or rice noodles for a gluten-free version

tempeh marinade ingredients:

  • juice of 1 freshly pressed orange (about 150ml)
  • juice of 1 freshly pressed lime
  • 2 tbsp maple syrup
  • 3 tbsp tamari or low sodium / gluten-free soy sauce
  • 1 star anise
  • 1 kp cinnamon
  • splash of rice vinegar
  • 1 tsp freshly grated ginger
  • 1 tsp freshly grated garlic
  • 1/2 chili thinly sliced
  • 2 tbsp water

noodle sauce ingredients:

  • 50ml tamari / low sodium / gluten-free soy sauce
  • 1 tbsp cashew butter
  • 2 tbsp soya milk
  • 1 tbsp sesame oil
  • juice of 2 pressed limes
  • 1 tbsp orange zest
  • 1/2 finely chopped chili
  • 1 garlic glove finely grated
  • 1 tsp tamarind sauce

method:

  1. prepare the tempeh marinade
  2. slice tempeh and marinate for at least 3h
  3. prepare noodle sauce and set aside
  4. drain tempeh but safe the marinade for later
  5. dry-fry tempeh in a non-sticking pan, if it starts to stick, add some water and / or marinade (for about 10 min on medium heat)
  6. add carrots and spring onions, stir well, fry for another 10 min and add rest of the marinade in small portions and wakame after 5 min
  7. add spinach and cucumber slices short before the marinade evaporated and the veggies are done, reduce heat
  8. cook noodles as instructed, add to the pan and stir well
  9. add noodle sauce and stir well
  10. serve with fresh cilantro, fresh lemon squeeze and toasted sesame seeds
