
ingredients:
- 1/2 cup semolina (polenta, buckwheat semolina for a glutenfree version)
- 1 tsp chia seeds
- 1 cup liquid
- 1/2 lemon squeezed
- 1/2 cup pumpkin puree
- 2 tbsp unsweetened apple sauce
- 1/2 apple sliced
- pinch of salt, 1 tsp cinnamon, cardamom
- freshly grated turmeric and ginger
- optional: baby spinach
- topped with: lemon peel, pomegranate seeds, fresh raspberries, 2 tbsp flaxseed oil
method:
- bring semolina, chia, spices, sliced apple and liquid to boil
- reduce heat and let it simmer for about 3 min
- incorporate pumpkin and apple puree (and spinach if you like to)
- top with a pinch of salt, fresh fruit, nuts, flaxseed oil or whatever you like
