Semolina-chia pudding with apple-pumpkin puree


  • 1/2 cup semolina (polenta, buckwheat semolina for a glutenfree version)
  • 1 tsp chia seeds
  • 1 cup liquid
  • 1/2 lemon squeezed
  • 1/2 cup pumpkin puree
  • 2 tbsp unsweetened apple sauce
  • 1/2 apple sliced
  • pinch of salt, 1 tsp cinnamon, cardamom
  • freshly grated turmeric and ginger
  • optional: baby spinach
  • topped with: lemon peel, pomegranate seeds, fresh raspberries, 2 tbsp flaxseed oil


  1. bring semolina, chia, spices, sliced apple and liquid to boil
  2. reduce heat and let it simmer for about 3 min
  3. incorporate pumpkin and apple puree (and spinach if you like to)
  4. top with a pinch of salt, fresh fruit, nuts, flaxseed oil or whatever you like
