Pink mixed pickles


  • 2 red onions, sliced in rings
  • 1/2 cauliflower head, divided
  • 1 red beet sliced
  • 1,5 cups of water
  • vinegar of your choice (I used apple cider vinegar, as much as the jar is covered)
  • 1 medium heat red chili, sliced
  • 1 glove of garlic, crushed
  • handful pink, green and black pepper corns
  • 1 tbsp kosher salt
  • 1/3 cup mustard seeds
  • 6 allspice corns
  • 1/4 cup fennel seeds
  • 1 bay leave
  • 1 tbsp maple syrup


  1. prepare all veggies, transfer to an airtight jar
  2. add spices, cover with water, close and shake well
  3. add vinegar until the jar is completely covered, shake well again
  4. refrigerate
