ingredients:
- 2 red onions, sliced in rings
- 1/2 cauliflower head, divided
- 1 red beet sliced
- 1,5 cups of water
- vinegar of your choice (I used apple cider vinegar, as much as the jar is covered)
- 1 medium heat red chili, sliced
- 1 glove of garlic, crushed
- handful pink, green and black pepper corns
- 1 tbsp kosher salt
- 1/3 cup mustard seeds
- 6 allspice corns
- 1/4 cup fennel seeds
- 1 bay leave
- 1 tbsp maple syrup
method:
- prepare all veggies, transfer to an airtight jar
- add spices, cover with water, close and shake well
- add vinegar until the jar is completely covered, shake well again
- refrigerate
